The characteristics such as appearance, taste, texture, flavour and shelf life of the edible oils remain unaffected by the process of fortification. Hence it acts as a perfect medium to provide the nutrients to our body to combat deficiencies. We fortify oils and fats with essential micronutrients that would improve the quality of edible oil thereby making it relevant in addressing micronutrient deficiencies. All kinds of edible oils (soybean, palm olein, groundnut, cotton seed and mustard) can be fortified with micronutrients.

The micronutrients used for the fortification of oil are as below:

Vitamin A
Vitamin D
Vitamin E
Vitamin K
